Along with garlic and seasonings, eggs are a staple in everyone’s cupboards and fridges. Whether they are the main ingredient or not, they are part and parcel of every dish in breakfast, lunch, dinner, and even during midnight. 


Well, what can we expect? They are cheap, versatile, and packed with protein, making them the perfect choice in terms of budget, convenience, and good health. However, this leads us to the more important matter. How do you use up this ingredient?

Breakfast: Egg fried rice

Items needed:

  • 500g cooked fragrant rice or just rice

  • 2 tbsp light soy sauce

  • 2 tbsp vegetable oil

  • Bunch of spring onions, chopped

  • 100g frozen peas

  • 2 large free-range eggs, beaten

  • 2 tsp sesame oil



  • In a large wok, heat oil over medium heat. Add the spring onions, stir-fry for one minute. Add the peas, continue cooking for another minute. Then, add the rice and mix them well together.

  • Form a space in the middle of the rice to set the beaten eggs. When the bottom starts to cook, quickly stir them through the rice.

  • Add soy sauce, salt, and sesame oil to taste. 

Snack: Breakfast egg burrito

Items needed:

  • 2 tsp canola oil

  • 1/2 cup parmesan cheese

  • 1 red bell pepper, seeded and diced

  • 2 large tomatoes, diced

  • 1/3 cup plain Greek yoghurt

  • salt and pepper

  • 5 egg whites

  • 1/3 cup salsa

  • 1/2 cup canned black beans, drained and rinsed

  • 5 large eggs

  • 10-inch whole wheat tortillas

  • 1 small red onion, diced



  • In a large wok, heat the oil over medium heat. Throw in the onions and peppers. Cook for eight minutes or until they turn soft and slightly brown. Add black beans and cook again for another three or more minutes. Season with salt and pepper to taste. Transfer to a dish, and set it aside.

  • Whisk together the eggs, egg whites, and cheese. In the same large wok, heat another oil over low heat. Add the egg mixture and cook for about three minutes. Transfer to a dish, and set it aside.

  • Spread each tortilla with Greek yoghurt and salsa. Then, top them with a black bean mixture, scrambled eggs, and three to four diced tomatoes.

  • Roll up the tortilla into a burrito and serve.

Dessert: French toast

Items needed:

  • 6 slices of white loaf

  • 30g butter

  • 3 medium eggs

  • 85 ml full-fat milk

  • Maple syrup

  • 60g powdered sugar

  • 6 tsp vanilla extract

  • Whipped cream, optional



  • In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and maple syrup.

  • Soak each loaf in the mixture for at least three minutes.

  • Meanwhile, heat the butter in a frying pan over medium heat. Fry the egg-soaked loaves until golden brown and where the edges are all crunchy.

  • Serve on a plate. If you want, you could top them with powdered sugar and whipped cream.
